Ingredients

  • 1 package (9 oz) of phyllo pastry
  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • ½ cup milk
  • Salt and pepper to taste
  • 1 small onion, diced (optional)
  • Sun-dried tomatoes (optional)
  • Cooked bacon or ham (optional)
  • Freshly chopped parsley or dill (for garnish)
  • A dollop of Greek yogurt or sour cream (for garnish)

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Unroll phyllo pastry and cut it into rectangles that fit your muffin tin. Layer the sheets into each muffin cup, brushing with melted butter if desired.
  • In a mixing bowl, whisk together the eggs and milk. Add salt and pepper to taste.
  • Fold in chopped spinach and crumbled feta, adding any optional ingredients at this time.
  • Pour the mixture into prepared muffin cups, filling each about ¾ full.
  • Bake for 20-25 minutes or until tops are lightly golden and set.
  • Allow to cool slightly before removing from the tin. Serve warm.
