Description

Ingredients

1 package (9 oz) of phyllo pastry
6 large eggs
1 cup fresh spinach, chopped
1 cup crumbled feta cheese
½ cup milk
Salt and pepper to taste
1 small onion, diced (optional)
Sun-dried tomatoes (optional)
Cooked bacon or ham (optional)
Freshly chopped parsley or dill (for garnish)
A dollop of Greek yogurt or sour cream (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Unroll phyllo pastry and cut it into rectangles that fit your muffin tin. Layer the sheets into each muffin cup, brushing with melted butter if desired.
In a mixing bowl, whisk together the eggs and milk. Add salt and pepper to taste.
Fold in chopped spinach and crumbled feta, adding any optional ingredients at this time.
Pour the mixture into prepared muffin cups, filling each about ¾ full.
Bake for 20-25 minutes or until tops are lightly golden and set.
Allow to cool slightly before removing from the tin. Serve warm.
