- 1 cup long grain rice
- 1 onion, chopped
- 1 bell pepper (red or green), diced

- 1 tablespoon Cajun seasoning
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cups beef broth
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Start by gathering all your ingredients for a smooth cooking experience. Chop the onions and bell peppers, and mince the garlic. If you’re using fresh beef, be sure to have it at room temperature for easier browning.
- In a large pot or Dutch oven, heat one tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Next, stir in the chopped onion and bell pepper, sautéing for about 3-4 minutes. The vegetables should be tender and fragrant.
- Add the minced garlic, Cajun seasoning, and rice to the pot. Stir everything together, allowing the rice to absorb the flavors for about a minute. Pour in the diced tomatoes (with their juices) and beef broth, and mix well. Bring the mixture to a boil, then reduce to a simmer, covering the pot. Cook for about 18-20 minutes or until the rice is tender and all liquid is absorbed.
- Once the rice is cooked, sprinkle the shredded cheddar cheese over the top. Cover the pot again for a few minutes to melt the cheese. Fluff the rice with a fork before serving. Enjoy it in bowls, garnished with fresh green onions and a side salad if you desire.
