  • 1 cup long grain rice
  • 1 onion, chopped
  • 1 bell pepper (red or green), diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions, for garnishing

Instructions

  1. Start by gathering all your ingredients for a smooth cooking experience. Chop the onions and bell peppers, and mince the garlic. If you’re using fresh beef, be sure to have it at room temperature for easier browning.
  2. In a large pot or Dutch oven, heat one tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Next, stir in the chopped onion and bell pepper, sautéing for about 3-4 minutes. The vegetables should be tender and fragrant.
  3. Add the minced garlic, Cajun seasoning, and rice to the pot. Stir everything together, allowing the rice to absorb the flavors for about a minute. Pour in the diced tomatoes (with their juices) and beef broth, and mix well. Bring the mixture to a boil, then reduce to a simmer, covering the pot. Cook for about 18-20 minutes or until the rice is tender and all liquid is absorbed.
  4. Once the rice is cooked, sprinkle the shredded cheddar cheese over the top. Cover the pot again for a few minutes to melt the cheese. Fluff the rice with a fork before serving. Enjoy it in bowls, garnished with fresh green onions and a side salad if you desire.

Notes
