- 2 cups cooked chicken, shredded
- 1 pound gnocchi, fresh or frozen
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (peas, carrots, corn)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Start by gathering all your ingredients. Chop the onion and mince the garlic. If you haven’t cooked the chicken yet, boil or roast it beforehand. Preheat your stove to medium heat.
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Add the mixed vegetables, cooked chicken, and gnocchi to the pot. Pour in chicken broth and heavy cream. Stir to combine, and sprinkle thyme, rosemary, salt, and pepper. Allow to simmer, stirring occasionally.
- Mix cornstarch with a little water if thicker sauce is desired and add it to the pot, stirring until the sauce thickens.
- Once thickened to your liking, transfer to a serving dish or serve directly from the pot. Garnish with fresh herbs or cheese if desired.
