A cozy and comforting overnight apple cinnamon brioche French toast bake, perfect for fall brunches and holiday gatherings.
Ingredients

- 1 large loaf of brioche bread (about 14–16 ounces)
- 3 large eggs
- 2 cups of whole milk
- 1/2 cup of brown sugar
- 1 teaspoon of vanilla extract
- 2 teaspoons of ground cinnamon
- 1/4 teaspoon of nutmeg (optional)
- 2–3 medium apples, peeled and diced
- 1/4 cup of chopped pecans or walnuts (optional)
- Butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
- Slice the brioche into thick pieces and cube them into smaller pieces.
- Whisk together the eggs, milk, brown sugar, vanilla extract, ground cinnamon, and nutmeg (if using) until smooth.
- Add the cubed brioche and diced apples to the mixture, coating them well.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Remove from fridge, let sit at room temperature while preheating the oven.
- Bake for 45-50 minutes, or until the top is golden brown and custard is set.
- Serve warm with maple syrup and optional garnishes such as powdered sugar or whipped cream.
Notes
Feel free to customize with nuts or dried fruits. Store leftovers in an airtight container for up to 3 days.
