  • 1 bell pepper (any color), diced
  • 1 cup mozzarella balls (bocconcini)
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste

  • Cook the pasta: Begin by boiling a large pot of water. Add a generous pinch of salt, and toss in the pasta. Cook until al dente, according to package instructions. Once done, drain and rinse under cold water to stop the cooking process.
  • Prep the veggies: While the pasta is cooling, chop your cherry tomatoes, cucumber, bell pepper, mozzarella, and red onion.
  • Combine everything: In a large mixing bowl, combine the cooled pasta, chopped veggies, olives, and mozzarella balls.
