2 cups raspberries (fresh or frozen)
1 cup granulated sugar
½ cup all-purpose flour
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking powder
½ cup unsalted butter (melted)
1 cup milk (or dairy-free alternative)
Zest of 1 lemon (optional)
Chopped nuts (like pecans or walnuts, optional)
1–2 tablespoons of bourbon (optional)
Fresh mint leaves (for garnish)
Vanilla ice cream or whipped cream (for serving)
Instructions
Preheat your oven to 350°F (175°C).
Combine sliced peaches and raspberries in a large bowl. Sprinkle with ¾ cup sugar, ½ cup flour, vanilla, and cinnamon. Toss gently. Pour into a greased 9×13-inch baking dish.
Mix the remaining ¼ cup sugar, ½ cup flour, baking powder, and a pinch of salt in another bowl. Add melted butter and milk, stirring until combined.
Spoon the topping over the fruit mixture.
