Description

Deliciously moist muffins combining the sweetness of ripe bananas with creamy peanut butter, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tray with paper liners or grease them lightly.
  2. Mash the ripe bananas in a bowl until smooth using a fork. Measure all your ingredients beforehand.
  3. Combine the mashed bananas, peanut butter, honey (or maple syrup), egg, and vanilla extract in a mixing bowl. Stir well until fully combined.
  4. Whisk together the flour, rolled oats, baking soda, and salt in another bowl. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  5. Fold in chocolate chips or nuts if using.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins are best enjoyed warm but can be stored in an airtight container for up to three days at room temperature or refrigerated for a week.
