Deliciously moist muffins combining the sweetness of ripe bananas with creamy peanut butter, perfect for breakfast or a snack.

- 2 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tray with paper liners or grease them lightly.
- Mash the ripe bananas in a bowl until smooth using a fork. Measure all your ingredients beforehand.
- Combine the mashed bananas, peanut butter, honey (or maple syrup), egg, and vanilla extract in a mixing bowl. Stir well until fully combined.
- Whisk together the flour, rolled oats, baking soda, and salt in another bowl. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
- Fold in chocolate chips or nuts if using.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
Notes
These muffins are best enjoyed warm but can be stored in an airtight container for up to three days at room temperature or refrigerated for a week.
