A light and refreshing salad featuring ripe pears, crunchy candied walnuts, and creamy cheese, perfect for any occasion.

- 4 cups Mixed Greens (arugula, spinach, or any preferred mix)
- 2 large Ripe Pears (Bartlett or Anjou)
- 1 cup Candied Walnuts (store-bought or homemade)
- ¾ cup Blue Cheese or Goat Cheese, crumbled
- ½ cup Dried Cranberries
- ¼ cup Red Onion, thinly sliced
- ¼ cup Olive Oil
- 2 tablespoons Balsamic Vinegar
- 1 tablespoon Honey
- Salt and Pepper, to taste
Instructions
- Prepare the ingredients: Wash and dry the mixed greens. Thinly slice the pears, keeping the skin on. If making candied walnuts, toss with sugar and toast in a skillet until golden.
- Mix the ingredients: In a large bowl, combine the mixed greens, sliced pears, crumbled cheese, and dried cranberries. Add candied walnuts if store-bought; if homemade, ensure they’re cooled.
- Drizzle the olive oil and balsamic vinegar over the salad. Add honey and season with salt and pepper. Gently toss to coat.
- Present: On a large platter or individual plates, artfully arrange the salad. Drizzle with more dressing and garnish with additional crumbled cheese, candied walnuts, and fresh basil or pomegranate seeds. Serve immediately.
Notes
For a vegan version, omit the cheese and use maple syrup instead of honey. Leftover salad can be stored in an airtight container for up to two days.
