1 pound of fresh asparagus
1 cup of white vinegar
1 cup of water
2–3 smashed garlic cloves
1 tablespoon of sugar
1 tablespoon of salt
1 teaspoon of red pepper flakes
1 teaspoon of black peppercorns
Optional: mustard seeds, dill sprigs, lemon slices for extra flavor
Special garnishes: fresh dill or sesame seeds
Instructions
Wash and trim the asparagus, snapping off the tough ends.
Combine white vinegar, water, smashed garlic, sugar, salt, red pepper flakes, and peppercorns in a saucepan, bring to a gently simmer and stir until sugar and salt dissolve.
Place the asparagus upright in sterilized jars, packing tightly but not squishing them.
Pour the hot brine over the asparagus until completely submerged, leaving half an inch at the top.
Wipe the jar rims with a clean cloth before sealing. Let cool to room temperature and then refrigerate.
Allow to sit in the fridge for at least 24 hours before enjoying.
