Description

Indulge in the warm, comforting flavors of fall with these decadent Pumpkin Swirl Cheesecake Bars, layered on a buttery graham cracker crust and infused with spices.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup pumpkin puree (preferably unsweetened)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ¼ tsp cloves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl until evenly mixed. Press this mixture into the bottom of the prepared pan.
  3. Bake the crust for about 10 minutes or until lightly golden brown, then remove it and let it cool slightly.
  4. In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat until smooth and creamy, about 2-3 minutes.
  5. Add the vanilla extract, eggs, pumpkin puree, spices, and salt, mixing until well combined.
  6. Scoop about a cup of this mixture into another bowl; add a touch more pumpkin and spice to intensify the flavors.
  7. Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  8. Add dollops of the spiced pumpkin mixture on top and create swirls through the filling with a knife or spatula.
  9. Bake for 30-35 minutes, or until the center is set but still slightly jiggly.
  10. Allow to cool at room temperature, then refrigerate for at least 4 hours before slicing.
  11. Serve chilled and enjoy!
