- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup pumpkin puree (preferably unsweetened)
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- ¼ tsp cloves (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl until evenly mixed. Press this mixture into the bottom of the prepared pan.
- Bake the crust for about 10 minutes or until lightly golden brown, then remove it and let it cool slightly.
- In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat until smooth and creamy, about 2-3 minutes.
- Add the vanilla extract, eggs, pumpkin puree, spices, and salt, mixing until well combined.
- Scoop about a cup of this mixture into another bowl; add a touch more pumpkin and spice to intensify the flavors.
- Pour the cream cheese mixture over the cooled crust, spreading it evenly.
- Add dollops of the spiced pumpkin mixture on top and create swirls through the filling with a knife or spatula.
- Bake for 30-35 minutes, or until the center is set but still slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours before slicing.
- Serve chilled and enjoy!
