Description

A delightful side dish combining the earthy sweetness of apples and the zesty tang of red cabbage, perfect for any season.

Ingredients

Scale
  • 1 medium red cabbage (about 2 pounds), finely shredded
  • 2 apples, peeled, cored, and sliced (Granny Smith or Honeycrisp)
  • 1 large onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 bay leaf
  • 1/2 cup water

Instructions

  1. Start by prepping all your ingredients. Rinse the red cabbage under cold water, then slice it finely. Peel and core the apples, slicing them into thin wedges. Slice the onion uniformly.
  2. Heat the olive oil over medium heat in a large skillet. Add sliced onions and sauté for about 5 minutes until soft and translucent.
  3. Stir in the shredded cabbage, allowing it to wilt slightly before adding the sliced apples.
  4. Pour in the apple cider vinegar and water, followed by brown sugar, salt, pepper, caraway seeds, and bay leaf. Mix thoroughly and bring to a simmer.
  5. Cook for approximately 30 minutes, stirring occasionally until the cabbage is tender and flavors mingle beautifully.
  6. Remove from heat and let it rest for 5 minutes before serving warm or at room temperature.

Notes

Enhance flavors with red pepper flakes or raisins. For a touch of nuttiness, top with toasted walnuts or fresh herbs.
