Ingredients

  • 1 can (15 oz) of chickpeas
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 1 cup of hummus
  • 4 whole wheat wraps (or your preferred tortilla)
  • 1 cup of mixed salad greens (arugula, spinach, or any preferred greens)
  • 1 cup of diced cucumber
  • 1 cup of diced tomatoes

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Drain and rinse the canned chickpeas. Pat them dry with a towel.
  • Place the chickpeas in a bowl and drizzle with olive oil, garlic powder, smoked paprika, and salt and pepper.
  • Spread the chickpeas on a baking sheet in a single layer and roast for about 20-25 minutes, stirring halfway through.
  • Lay out your tortillas and spread a generous dollop of hummus on each.
  • Layer the roasted chickpeas, salad greens, diced cucumber, and tomatoes on top of the hummus.
  • Take one side of the wrap and fold it over the filling, then tuck in the sides and roll it up tightly.
  • Use a sharp knife to cut the wrap in half diagonally.
