- 1 medium Delicata squash
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
- A sprinkle of cinnamon (optional)
- Chopped fresh parsley or thyme (for garnish)
- Toasted pumpkin seeds (for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Cut the Delicata squash in half lengthwise, scoop out the seeds, and slice it into half-inch rings.
- Combine the sliced squash with olive oil, garlic powder, paprika, salt, and pepper in a large mixing bowl. Toss until evenly coated.
- Arrange the rings in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
- Transfer the roasted rings to a serving platter, overlapping them like flower petals. Top with fresh herbs and toasted pumpkin seeds for garnish.
Notes
Leftover squash can be stored in an airtight container for up to 3 days. To reheat, warm in a preheated oven at 350°F (175°C).
