10 oz of fresh spinach1 can (14 oz) of artichoke hearts, drained8 oz of cream cheese1 cup of shredded mozzarella cheese½ cup of grated Parmesan cheese2 cloves of garlic, minced½ tsp of red pepper flakes (optional)Salt and pepper to tasteOlive oil for sautéing
Preheat your oven to 375°F (190°C).In a large pot over medium heat, add a splash of olive oil and sauté the garlic for about a minute until it’s fragrant.Add the fresh spinach and cook for a few minutes, stirring until it wilts down.Toss in the drained and chopped artichoke hearts, and let them warm through for another couple of minutes.In a large mixing bowl, combine the cooked spinach and artichokes with the cream cheese, mozzarella, and Parmesan.Transfer the mixture into a greased baking dish and smooth the top.Bake in your preheated oven for about 25-30 minutes, or until the top is bubbling and slightly golden.Let it sit for a few minutes before serving with pita chips.
