  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 container (15 oz) ricotta cheese
  • 1 egg
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  • In a skillet over medium heat, add a splash of olive oil and sauté the spinach until wilted, about 3–5 minutes. Allow it to cool slightly before chopping finely.
  • In a bowl, combine the ricotta, cooked spinach, egg, and Italian seasoning. Season with a bit of salt and pepper, mixing well.
  • Spread a bit of marinara sauce at the bottom of a 9×13 inch baking dish. Layer three noodles, half of the ricotta mixture, then 1 cup of marinara sauce, and 1 cup of mozzarella cheese. Repeat this layering, finishing with a layer of noodles topped with remaining marinara and mozzarella, and a sprinkle of parmesan.
  • Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbling and golden brown. Let cool for a few minutes before slicing.
