- 4 Salmon Fillets (about 6 ounces each)
- 4 cups Broccoli Florets, fresh or frozen
- 4 tablespoons Olive Oil, for drizzling
- 4 cloves Garlic, minced
- 3 tablespoons Lemon Juice, fresh squeezed
- 1 teaspoon Lemon Zest
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Parsley, chopped
- 1/2 teaspoon Red Pepper Flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop your broccoli into bite-sized pieces, then mince the garlic and prepare the lemon juice and zest.
- Arrange salmon fillets on a baking sheet and scatter broccoli around them.
- Drizzle with olive oil and season with salt and pepper.
- Whisk together garlic, lemon juice, and zest, then pour over salmon and broccoli.
- Roast for 15-20 minutes, until salmon flakes easily and broccoli is tender-crisp.
- Garnish with parsley before serving.
Notes
For a spicier kick, consider adding a pinch of red pepper flakes. Leftover salmon can be stored in an airtight container for up to 2-3 days.
