- 4 Salmon Fillets
- 4 large Carrots, washed and peeled
- 1/2 cup Unsalted Butter
- 1/4 cup Fresh Parsley, chopped
- 1/4 cup Fresh Dill, chopped
- 1/4 cup Fresh Chives, chopped
- 3 cloves Garlic, minced
- 1 Lemon, zested and juiced
- Salt and Pepper to taste
- Red Pepper Flakes (optional)
- Lemon Wedges, for serving
- Chopped Fresh Herbs, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the carrots, then slice into sticks. Pat the salmon fillets dry and season with salt and pepper.
- Melt the butter in a small saucepan over low heat, then stir in minced garlic, lemon zest, and chopped herbs.
- Arrange the carrots on a sheet pan, drizzle half of the herb butter over them, and toss to coat. Roast for 10 minutes.
- Remove the pan from the oven, place the salmon among the carrots, and drizzle with the remaining herb butter. Roast for an additional 12-15 minutes.
- Serve the salmon and carrots on a platter with remaining herb butter drizzled on top, garnished with fresh herbs and lemon wedges.
