Description

A delightful dinner featuring succulent salmon fillets paired with roasted carrots, drizzled in a rich herb butter sauce.


Ingredients

  • 4 Salmon Fillets
  • 4 large Carrots, washed and peeled
  • 1/2 cup Unsalted Butter
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Fresh Dill, chopped
  • 1/4 cup Fresh Chives, chopped
  • 3 cloves Garlic, minced
  • 1 Lemon, zested and juiced
  • Salt and Pepper to taste
  • Red Pepper Flakes (optional)
  • Lemon Wedges, for serving
  • Chopped Fresh Herbs, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and peel the carrots, then slice into sticks. Pat the salmon fillets dry and season with salt and pepper.
  2. Melt the butter in a small saucepan over low heat, then stir in minced garlic, lemon zest, and chopped herbs.
  3. Arrange the carrots on a sheet pan, drizzle half of the herb butter over them, and toss to coat. Roast for 10 minutes.
  4. Remove the pan from the oven, place the salmon among the carrots, and drizzle with the remaining herb butter. Roast for an additional 12-15 minutes.
  5. Serve the salmon and carrots on a platter with remaining herb butter drizzled on top, garnished with fresh herbs and lemon wedges.
