1 pound large shrimp (peeled and deveined)
4 tablespoons unsalted butter
4 cloves garlic (minced)
1 teaspoon red pepper flakes
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice
1 pound asparagus (trimmed) or broccoli florets
¼ cup fresh parsley (chopped)
Optional: Cherry tomatoes, white wine, lemon zest, extra parsley, grated Parmesan
Instructions
Preheat your oven to 400°F (205°C).
In a large bowl, toss together the shrimp, asparagus (or broccoli), melted butter, minced garlic, red pepper flakes, salt, black pepper, and lemon juice.
Spread the shrimp and veggies evenly on a large baking sheet lined with parchment paper.
Bake for about 10-12 minutes, or until the shrimp are pink and opaque.
Once done, sprinkle fresh chopped parsley over the top and add grated Parmesan if desired.
Serve hot, ideally with pasta or crusty bread.
