Description

A simple yet delicious recipe for smoked sausage and perfectly roasted potatoes, perfect for family gatherings or cozy nights.


Ingredients

  • 1 lb smoked sausage
  • 1.5 lbs baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bell pepper (any color), diced
  • 1 medium onion, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse and halve the baby potatoes; no need to peel them! Dice the bell pepper and slice the onion.
  2. Combine the halved potatoes, diced sausage, bell pepper, and onion in a large mixing bowl. Drizzle the olive oil over the mixture, sprinkle with garlic powder, onion powder, paprika, salt, and pepper, and toss until well-coated.
  3. Spread the mixture out evenly on a large sheet pan and bake in the oven for about 30-35 minutes, stirring halfway through. For added flavor, consider broiling for the last 2-3 minutes.
  4. Remove from the oven and serve the dish directly from the pan or on a platter, garnished with fresh herbs.

Notes

For added spice, consider adding red pepper flakes or jalapeños. For a vegetarian option, replace sausage with plant-based alternatives.
