- 1 lb smoked sausage
- 1.5 lbs baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 bell pepper (any color), diced
- 1 medium onion, sliced
Instructions
- Preheat your oven to 400°F (200°C). Rinse and halve the baby potatoes; no need to peel them! Dice the bell pepper and slice the onion.
- Combine the halved potatoes, diced sausage, bell pepper, and onion in a large mixing bowl. Drizzle the olive oil over the mixture, sprinkle with garlic powder, onion powder, paprika, salt, and pepper, and toss until well-coated.
- Spread the mixture out evenly on a large sheet pan and bake in the oven for about 30-35 minutes, stirring halfway through. For added flavor, consider broiling for the last 2-3 minutes.
- Remove from the oven and serve the dish directly from the pan or on a platter, garnished with fresh herbs.
Notes
