- 4 pieces tilapia fillets (about 6 oz each)
- 1 pound green beans, trimmed
- 1/4 cup extra virgin olive oil
- Juice from 2 lemons
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley or basil leaves, for garnish
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C). Rinse and dry the tilapia fillets, and trim the green beans.
- Whisk together olive oil, lemon juice, minced garlic, thyme, oregano, salt, and pepper in a small bowl. Lay tilapia on one side of a sheet pan and drizzle with half the marinade. Spread green beans on the other side and drizzle with the remaining marinade.
- Bake in the preheated oven for 15-20 minutes or until tilapia is opaque and flakes easily, and green beans are tender yet crisp. Remove, garnish with herbs and lemon wedges, and serve.
Notes
For a spicy kick, consider adding crushed red pepper flakes. This dish pairs nicely with crusty bread and light salads.
