Description

A vibrant and nutritious meal featuring tilapia fillets marinated in lemon herb dressing and paired with crunchy green beans, all baked to perfection on a single sheet pan.


Ingredients

  • 4 pieces tilapia fillets (about 6 oz each)
  • 1 pound green beans, trimmed
  • 1/4 cup extra virgin olive oil
  • Juice from 2 lemons
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or basil leaves, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse and dry the tilapia fillets, and trim the green beans.
  2. Whisk together olive oil, lemon juice, minced garlic, thyme, oregano, salt, and pepper in a small bowl. Lay tilapia on one side of a sheet pan and drizzle with half the marinade. Spread green beans on the other side and drizzle with the remaining marinade.
  3. Bake in the preheated oven for 15-20 minutes or until tilapia is opaque and flakes easily, and green beans are tender yet crisp. Remove, garnish with herbs and lemon wedges, and serve.

Notes

For a spicy kick, consider adding crushed red pepper flakes. This dish pairs nicely with crusty bread and light salads.
