- 1 cup apple cider
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Optional: Fresh parsley for garnish
Instructions
- Begin by gathering all your ingredients and preheating your skillet over medium-high heat. Pat the chicken thighs dry with a paper towel, season them with salt and pepper.
- Add olive oil to the hot skillet, then place chicken thighs skin-side down. Sear for about 6-7 minutes until golden brown.
- Flip the thighs and add minced garlic and thyme. Stir around before mixing apple cider, Dijon mustard, and apple cider vinegar in a bowl and pouring it over chicken.
- Reduce the heat to medium-low, cover, and simmer for 20-25 minutes until cooked through.
- Uncover the skillet and simmer for an additional 5 minutes to reduce the sauce. Serve garnished with parsley and apple slices.
