- 4 lbs bone-in beef short ribs
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (163°C) and season the short ribs generously with salt and pepper.
- Heat olive oil in a large, oven-safe pot over medium-high heat and sear the short ribs on all sides until browned.
- Remove the short ribs and add diced onions, carrots, and celery to the pot, cooking until softened.
- Stir in minced garlic and cook until fragrant, then pour in red wine and scrape the pan’s bottom.
- Add the short ribs back to the pot along with beef broth, tomato paste, thyme, and bay leaf.
- Bring the mixture to a simmer, cover, and transfer to the oven to braise for 2.5 to 3 hours.
- Remove from the oven and let rest for 10 minutes before serving.
- Serve over mashed potatoes or alongside vegetables, garnished with parsley.
Notes
Enhance your dish with optional mushrooms, Worcestershire sauce, or a sprinkle of red pepper flakes for added flavor.
