Ingredients

- 1 1/2 cups warm water (about 110°F)
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon kosher salt
- 1/4 cup baking soda (for the water bath)
- 1 egg (for egg wash)
- Coarse sea salt (for topping)
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour (for beer cheese)
- 1 cup beer (lager or pale ale)
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 450°F (230°C). In a large mixing bowl, combine the warm water, yeast, and sugar. Allow it to sit for about 5 minutes until frothy.
- Stir in the flour and salt until a dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Let rise in a greased bowl for 30 minutes.
- Melt the butter in a saucepan over medium heat. Whisk in the flour, then gradually add the beer, stirring continuously. Add the cheese, garlic powder, salt, and pepper. Stir until smooth.
- Punch down the dough, roll into ropes, and cut into bite-sized pieces. Boil in baking soda water for 30 seconds, remove and place on a parchment-lined baking sheet. Brush with egg wash and sprinkle with coarse salt.
- Bake for 10-12 minutes until golden brown. Serve warm with beer cheese.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in a warm oven. Can be frozen before or after baking.
