- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- 1 cup chopped chives (fresh or dried)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup breadcrumbs
- 1 tablespoon butter (for greasing)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 350°F (175°C). Grease a medium-sized baking dish (around 9×13 inches) with butter.
- Combine corn, sour cream, cheddar cheese, chives, eggs, and milk in a large mixing bowl. Season with salt and pepper, then sprinkle in breadcrumbs.
- Pour the mixture into the greased baking dish and sprinkle extra cheese on top. Bake for 40-45 minutes until the top is bubbly and golden brown.
- Allow the casserole to cool for a few minutes before serving.
Notes
For a kick, add chopped jalapeños or hot sauce. For vegan options, substitute sour cream with non-dairy yogurt and cheese with cashew cheese.
