Description

Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 cup chopped chives (fresh or dried)
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup breadcrumbs
  • 1 tablespoon butter (for greasing)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a medium-sized baking dish (around 9×13 inches) with butter.
  2. Combine corn, sour cream, cheddar cheese, chives, eggs, and milk in a large mixing bowl. Season with salt and pepper, then sprinkle in breadcrumbs.
  3. Pour the mixture into the greased baking dish and sprinkle extra cheese on top. Bake for 40-45 minutes until the top is bubbly and golden brown.
  4. Allow the casserole to cool for a few minutes before serving.

Notes
