  • 4 cups All-Purpose Flour
  • ½ cup Brown Sugar
  • 1 tablespoon Cinnamon
  • 1 teaspoon Salt
  • 1 cup Warm Water
  • ¼ cup Olive Oil
  • 1 Egg
  • Optional: Cream Cheese (for frosting)
  • Optional: ½ cup Chopped Nuts
  • Optional: ½ cup Dried Fruits
  • For garnish: Icing Sugar, Fresh Fruits

Instructions

  1. Prepare your sourdough starter. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Combine sourdough starter, warm water, and olive oil in a bowl. Whisk in the egg. Gradually add flour, brown sugar, salt, and cinnamon; stir until a shaggy dough forms. Knead for about 10 minutes until smooth.
  3. Place the dough in an oiled bowl, cover, and let rise until doubled in size (approximately 2 hours).
  4. Flatten the risen dough on a floured surface. Roll into a rectangle, spread with cream cheese and sprinkle remaining brown sugar and cinnamon. Roll tightly and slice into sections.
  5. Arrange the slices in the prepared dish, let rise again for 1 hour. Poke dimples in the dough, drizzle with olive oil, and bake for 25-30 minutes until golden brown.
  6. Cool slightly before serving. Optionally top with icing sugar drizzle.
