- 2 lbs chicken breast, cubed
- 1/4 cup olive oil
- 3 tablespoons hot sauce
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 3 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- Red onion, sliced (optional)
- Jalapeños, sliced (optional)
- Chopped fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Start by preparing your chicken. Cut the chicken breasts into 1-inch cubes and place them in a mixing bowl. In a separate bowl, combine olive oil, hot sauce, smoked paprika, garlic powder, cumin, salt, and pepper. Pour this marinade over the chicken, ensuring every piece is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
- While the chicken is marinating, prepare the slaw by shredding the cabbage and carrots. In a smaller bowl, mix rice vinegar, sugar, salt, and pepper to create a tangy dressing, then toss it with the cabbage and carrots and set aside.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers and place them on the hot grill, cooking for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
- Once cooked, remove kabobs from the grill, let them rest for a few minutes, and serve them on a large platter with slaw and garnishes.
Notes
For added flavor, brush with more hot sauce during the last minutes of grilling. Serve with lime wedges for a zesty touch.
