Description

Savory steak and egg breakfast tacos topped with zesty chimichurri sauce for a satisfying morning meal. Perfect for brunch or breakfast lovers!

Ingredients

Scale
  • 8 oz of steak
  • 4 large eggs
  • 4 small tortillas (corn or flour)
  • 1 avocado (optional)
  • Salt and pepper, to taste
  • Chimichurri sauce (see recipe below)

  • Instructions

  • Prepare the chimichurri sauce: In a small bowl, mix together about 1 cup of finely chopped parsley, 2 minced garlic cloves, 1 teaspoon of red pepper flakes, 1/2 cup of olive oil, and a splash of red wine vinegar. Season with salt and pepper. Set aside to let the flavors develop.
  • Cook the steak: Heat a skillet over high heat and add a touch of oil. Season the steak with salt and pepper, then sear it for about 3-4 minutes on each side, depending on thickness and desired doneness. Let it rest before slicing.
  • Scramble the eggs: In a bowl, whisk together the eggs along with a pinch of salt and pepper. Lower the heat to medium, add a bit of butter to the skillet, and pour in the egg mixture. Stir gently until creamy.
  • Warm the tortillas: In a separate pan or over the flame, warm the tortillas for a few seconds on each side.
  • Assemble the tacos: Slice the rested steak into thin strips. Layer a tortilla, steak, scrambled eggs, and generously dollop chimichurri on top. Add any optional garnishes you fancy.
  • Enjoy! Serve immediately.
