  • 1 teaspoon of vanilla extract (optional)
  • 1/2 teaspoon of cinnamon (optional)
  • Whipped cream (for garnish)
  • Fresh mint leaves (for garnish)
  • Maple syrup (for serving)

  • Instructions

  • In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk until blended.
  • In another bowl, mix the buttermilk, egg, and melted butter. Add vanilla extract and cinnamon if desired. Whisk until smooth and frothy.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined—lumps are okay.
  • Gently fold in the mixed berries without crushing them.
  • Preheat a non-stick skillet over medium heat and lightly grease with butter or cooking spray. Drop a tablespoon of batter for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden.
  • Serve warm with maple syrup and your favorite garnishes.
