Ingredients

  • 1 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup mixed vegetables (bell peppers, broccoli, and snap peas)
  • 1/2 cup coconut milk
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 tablespoon honey or maple syrup (for vegan option)
  • Pinch of salt

Instructions

  1. Start by preheating your grill or stovetop pan over medium-high heat. Chop your chicken thighs into bite-sized pieces and pat them dry with a paper towel. In a mixing bowl, combine the sweet chili sauce, soy sauce, rice vinegar, garlic powder, and ginger powder, and reserve a third of this marinade for basting later.
  2. Toss the chicken in the remaining marinade, ensuring each piece is well-coated. Let it marinate for at least 20 minutes. Once the grill is hot, add the marinated chicken and cook for about 5-7 minutes per side or until it reaches an internal temperature of 165°F (74°C). While the chicken is grilling, stir-fry the mixed vegetables with a drizzle of oil in a separate pan until tender but still crisp, about 3-5 minutes.
  3. To serve, place cooked rice in a bowl. Spoon the grilled chicken on top and then add the stir-fried vegetables. Drizzle generously with the coconut lime sauce. Garnish with green onions, sesame seeds, or a sprinkle of lime zest!

Notes

For a spicy kick, add sriracha or red pepper flakes to the marinade. This dish pairs well with a fresh cucumber salad.
