Description

Delicious quesadillas filled with roasted sweet potatoes, black beans, and gooey cheese, perfect for cozy gatherings.


Ingredients

  • 2 medium sweet potatoes (peeled and diced)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • 4 large tortillas (whole grain or flour)
  • Olive oil (for roasting)

Instructions

  1. Preheat your oven to 400°F (200°C). Dice the sweet potatoes into small cubes and toss with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet.
  2. Roast the sweet potatoes for about 20-25 minutes until tender and browned. Combine with rinsed black beans in a bowl, mixing gently.
  3. Sprinkle in your shredded cheese and mix well. Assemble by laying a tortilla flat, spooning the mixture onto one half, and folding it over. Brush with olive oil.
  4. Cook the quesadilla on a skillet over medium heat for about 3-4 minutes on each side until golden. Serve immediately, cutting into wedges.
