1 cup mashed sweet potatoes
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them lightly.
Boil, roast, or microwave sweet potatoes until soft. Once cool, mash them until smooth.
In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; a few lumps are okay!
Spoon the batter into prepared muffin tins, filling each cup about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
