  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

  • Instructions

  • Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them lightly.
  • Boil, roast, or microwave sweet potatoes until soft. Once cool, mash them until smooth.
  • In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  • In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; a few lumps are okay!
  • Spoon the batter into prepared muffin tins, filling each cup about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
