1 lb of turkey sausage
4 large eggs
1/2 cup of shredded cheese (optional)
4 large flour tortillas
1/2 cup of chopped bell peppers
1/4 cup of chopped onions
Salt and pepper to taste

Instructions
In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion and bell peppers, sautéing until they are soft and fragrant.
Next, crumble the turkey sausage into the skillet. Cook it until it's no longer pink and nicely browned, about 8-10 minutes.
While the sausage is cooking, whisk the eggs in a bowl. Once the turkey is done, push it to one side of the skillet and pour the eggs in. Scramble them gently, mixing in the sausage as the eggs set.
Once the eggs are cooked to your liking, sprinkle in the cheese (if using), and let it melt for a minute. Give everything a good stir to combine, seasoning with salt and pepper to taste.
Now it’s time to assemble the burritos! Warm your tortillas for a few seconds to make them easier to roll without tearing.
