  • 4 large Portobello mushrooms
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 tablespoon of fresh rosemary, chopped
  • 1 tablespoon of fresh thyme, chopped
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Optional: Smoked paprika
  • Optional: Crushed red pepper flakes
  • Optional garnishes: Fresh parsley or chives, toasted pine nuts or walnuts

  • Instructions

  • Preheat your grill or grill pan over medium-high heat.
  • In a mixing bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, lemon juice, salt, and pepper. Stir well.
  • Remove the stems from the Portobello mushrooms and wipe them clean with a damp paper towel.
  • Brush the garlic-herb mixture generously on both sides of each mushroom.
  • Grill the mushrooms gill side down for 5-7 minutes on each side, until tender and grill-marked.
  • Remove from heat and let them rest for a few minutes.
