4 cups of cubed watermelon
1 large cucumber, sliced into rounds
1 cup of crumbled feta cheese
1/2 cup of balsamic vinegar
1 tablespoon of honey
Fresh mint for garnish
Skewers (bamboo or metal)
Instructions
Prepare the balsamic drizzle: In a small saucepan, combine the balsamic vinegar and honey over medium heat. Allow it to simmer for about 10-15 minutes, stirring occasionally until it thickens slightly.
Get your skewers ready: If you’re using bamboo skewers, soak them in water for about 30 minutes to prevent burning. Then, gather your watermelon, cucumber, and feta.
Assemble the skewers: Start by threading a piece of watermelon onto the skewer, followed by a cucumber slice, then a generous piece of feta. Continue alternating until the skewer is filled.
Finish with the drizzle: Once all your skewers are assembled, transfer them to a serving platter. Drizzle the cooled balsamic reduction generously over the skewers.
Add garnishes: Sprinkle fresh mint leaves on top of the skewers for an extra pop of color and flavor.
