  • 1 pound of chicken breast, sliced into thin strips
  • 2 tablespoons of sesame oil
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 23 cloves of garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • Green onions and sesame seeds for garnish

  • Instructions

  • Cook the noodles: Start by boiling a pot of salted water and cooking the noodles according to the package instructions. Stir often to prevent sticking, then drain and set aside. Reserve about a cup of the starchy pasta water.
  • Cook the chicken: In a large skillet over medium-high heat, add sesame oil. Add sliced chicken, sprinkle with salt and pepper, and cook until golden brown, about 5-7 minutes.
  • Prepare the sauce: In the same pan, reduce heat to low, add minced garlic and stir for about a minute. Mix in peanut butter, soy sauce, honey, rice vinegar, and a couple tablespoons of reserved pasta water until smooth.
  • Combine it all: Toss in the cooked noodles, vegetables, and chicken, stirring until each noodle is coated with the sauce.
  • Garnish: Serve noodles in bowls, topping with green onions and sesame seeds.
