8 ounces of noodles (spaghetti or rice noodles)
1 pound of chicken breast, sliced into thin strips
2 tablespoons of sesame oil
1/2 cup peanut butter
1/4 cup soy sauce
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
2–3 cloves of garlic, minced
1 carrot, julienned
1 bell pepper, sliced
Green onions and sesame seeds for garnish
Instructions
Cook the noodles: Start by boiling a pot of salted water and cooking the noodles according to the package instructions. Stir often to prevent sticking, then drain and set aside. Reserve about a cup of the starchy pasta water.
Cook the chicken: In a large skillet over medium-high heat, add sesame oil. Add sliced chicken, sprinkle with salt and pepper, and cook until golden brown, about 5-7 minutes.
Prepare the sauce: In the same pan, reduce heat to low, add minced garlic and stir for about a minute. Mix in peanut butter, soy sauce, honey, rice vinegar, and a couple tablespoons of reserved pasta water until smooth.
Combine it all: Toss in the cooked noodles, vegetables, and chicken, stirring until each noodle is coated with the sauce.
Garnish: Serve noodles in bowls, topping with green onions and sesame seeds.
