- 4 medium potatoes (cut into wedges)
- 3 tablespoons za’atar seasoning
- 4 cloves garlic (minced)
- 3 tablespoons olive oil
- 1 lemon (juiced)

Instructions
- Preheat your oven to 425°F (220°C). Rinse the chicken thighs under cold water and pat them dry with paper towels.
- Combine the chicken thighs, potato wedges, minced garlic, za’atar seasoning, olive oil, lemon juice, salt, and pepper in a large bowl. Mix until well coated.
- Spread the chicken and potatoes in a single layer on a sheet pan. Roast in the oven for 40-45 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Let the dish rest for a few minutes before serving. Garnish with fresh parsley and lemon wedges.
